(Makes a large Casserole dish full - Serves 12)

YOU certainly won't find this in the Adkins diet book, but it will leave a smile on your face when you've eaten!

For this recipe you will need the following ingredients:
Preheat Oven: 375 degrees
Bake for 30 - 40 minutes
Serves: 12

INGREDIENTS:

1 package (16 oz.) of nested pasta -Colavita brand
1 can (20 ounce) unsweetened pineapple chunks with liquid
1 cup raisins + apples
1 cup sugar
1 egg
Cinnamon to taste

DIRECTIONS:

  1. In a large sauce pan, bring water to boil and cook pasta according to package directions. Rince pasta when done.
  2. Peel, core, and dice apples into chunks. Mix with remaining ingredients.
  3. Add pasta to apple mixture.
  4. Spray a large rectangular pan (13 x 9) with Pam. A Pyrex dish is preferred because you will be able to see if the kugel is golden on the bottom. Pour the mixture into the pan and cover it with aluminum foil.
  5. Bake at 375 degrees for about 30 - 40 minutes. Remove foil about halfway through cooking time to allow the top to become golden brown.

This makes a wonderful dish for Passover, particularly if your guests are vegetarian. I had to laugh at myself with this recipe when I was at Lena's home that evening. While she prepared this wonderful meal - appetizers, main dish, veggies, and desserts, I totally passed on the dessert part and had a second helping of kugel. <giggles> Adkins diet - my foot!
